1 gallon small beets, water to gover and cook beets with roots and about 2" of stem left on...cook til tender
Dip beets into cold water, slip off skins
Put beets on a large kettle
Combine
1 Tblsp whole allspice
1 long stick of cinnamon
1 quart of vinegar ( apple cider)
Pour over beets and simmer 15 minutes
Then add 1 cup honey
Pack beets into sterilized pint jars
Cover beets with boiling syrup
Process pints for 10 minutes in aboiling water bath
